Delicious Stuffed Mushrooms
This amazingly simple and delicious meal is going to have your guests raving about your culinary talents
Approximately 12 big, beautiful, fresh mushrooms
1/2 cup peeled pistachios
1/2 cup cashews
100g reduced fat fetta cheese
1 tspn spread
Take the stem out of the mushrooms and place them onto an oven tray. Pop the nuts in the food processor and whiz them up until they are fine. Add the fetta and the spread and process the mixture until it holds together. Place a spoonful of the mixture into each mushrooms, drizzle with olive oil and bake in the oven at 180C or 350F for approximately 15 minutes.
We served our mushrooms with a rocket and mango salad drizzled with sweet chilli sauce. This is such an easy and yummy dish you will be making it again and again.
