Dairy Free Chocolate Mousse
To call this a mousse really sells it short, it can be a pie filling or frozen as ice-blocks. This is what you will need:
1/2 cup pitted dates (soaked for a couple of hours)
1/2 cup raw cashews (soaked for a few hours)
1 packet of silken tofu
1/2 cup rice milk
2 blocks a dairy free chocolate (we use a mix of light and dark chocolate)
Blend the tofu, drained dates and cashews and rice milk until it is very smooth, if it is too thick you can add a little more rice milk. Melt the chocolate and add to the mixture and continue to blend. We pop some in a bowl to keep in the fridge for mousse, we freeze some in ice-block molds for chocolate ice-blocks and if we have a pie crust ready we pour some in there as well, it is so delicious served with fresh strawberries. You will need to wait a couple of hours for the mousse to set or freeze but it is so worth it!
