Pasta Salad
Healthy and Delicious Pasta Salad
This salad makes an awesome lunch box treat and can be adapted to whatever ingredients you have in the fridge. We have used:
1 Packet of Rice Pasta (Cooked to the directions on the pack)
Chopped Raw Vegies, we have used broccoli, peas, corn and carrots
Vegan Mayo or your mayo of choice
Salt and Pepper to taste
Cook up your pasta and drain in a colander, I sprinkle salt and olive oil on this stage as it makes the pasta tasty and stops it from sticking together.
Add your raw vegies, mix it all around and pop into a bowl.
Stir your mayo through the salad and enjoy. This is such a simple side dish with dinner, a quick afternoon tea snack and fantastic for the school lunch.
