Broccoli Soup
Amazing Broccoli Soup
Who could have ever imagined Broccoli Soup would taste so good that the kids want seconds?
This soup is super simple, yummy, healthy and all you need is:
2 Bunches of Broccoli washed well and chopped
1 Chicken Stock Cube
2 Cloves of Crushed Garlic
Place all of the ingredients in a saucepan with just enough water to reach approximately 1/2 way up the chopped broccoli (it doesn’t need to cover all of the broccoli as it will steam away nicely)
Leave to simmer and steam for approximately 15 minutes.
Allow the mixture to cool and then blend into a delicious soup, add salt and pepper to taste.
How simple is that?! Within 30 minutes you have a delicious healthy soup on the table, just perfect for lunch, an after school snack or an entree at dinner time.
