Chocolate Chia Seed Cake
This is an amazing cake, so delicious and light and fluffy, everyone will enjoy this cake so much they won’t believe that it is dairy and gluten free.
You will need:
4 Tablespoons of chia seeds soaked in 1 cup of water for an hour
1/2 cup of Cacao powder
3 Tablespoons of brown rice flour
125g of softened coconut oil
5 Medium Eggs
1 Cup of Almond Meal
3/4 Cup of Honey
Pinch of Salt
1 Teaspoon of Bicarb Soda
Directions:
Preheat oven to 155C
Line your baking tin on the bottom and grease the sides
Place all of the ingredients into a mixing bowl and mix on low speed for approximately 3 minutes.
Pour into the cake tin and place in the oven for approximately 35 minutes, test whether it is cooked by touching the center of the cake to see if it springs back up.
Leave in the pan to cool for approximately 10 minutes then place onto a wire rack.
This is a beautiful cake to serve with our chocolate dairy free ganache.
