Orange Poppyseed Cake
Delicious Grain and Dairy Free Orange and Poppyseed Cake
This cake is not only delicious it is also packed with citrus bio-flavonoids which help with vitamin C absorption and have also been shown to fight cancer.
You will need:
2 Oranges
3 Eggs
1/2 Cup of Honey
3 Cups of Almond Meal
1 Tbspn of Poppyseeds
1 Tbspn Brown Rice Flour
1 Tspn of Baking Powder
Grease and line a round cake pan
Preheat oven to 160C
Wash, scrub and chop oranges (peel and all), place the oranges in a saucepan with enough water to cover and also add the honey. Simmer covered for approximately 15 minutes and then allow to cool.
When the orange mixture is cool blend it until it is liquified and add the egg yolks.
Place the egg whites in the mixer bowl and allow to beat until firm.
Place the dry ingredients in a bowl and mix thoroughly (almond meal, poppy seeds, rice flour and baking powder)
Mix the wet ingredients (oranges) and dry ingredients together then fold in the egg whites.
Bake for approximately 45 minutes depending on your oven.
If you prefer to bake these as muffins they work quite well but may stick to cake paper so it is best to put them directly in a greased muffin tray with a round of baking paper on the bottom.
