Pumpkin Soup
Pumpkin Soup is our favorite soup and this one is little more hearty and healthy than some. You will need:
1/2 a Pumpkin
3 Sweet Potatoes
2 Cups of Red Lentils
2 Cloves of Garlic
1 Tbspn of Chicken Stock
Salt and Pepper
Water (Enough to cover all of the ingredients)
1 Tin of really good quality coconut milk
Chop the Pumpkin and Potato, throw it all in the slow cooker, add all of the other ingredients except the coconut milk, place on Auto for a few hours. After a few hours everything should be nice and soft, leave it to cool and then blend it up so it’s smooth, pour it back in the slow cooker. Add the coconut milk and give it a gentle stir, leave it to sit on a low setting until you need to serve. This is such a yummy recipe for a rainy day and a great back-up dinner to keep frozen.
