Sweet Pie Crust For Every Occasion
Think you can’t make a delicious pie crust in less than half an hour? Think again and all you will need is:
1 1/2 cups of walnuts
1 1/2 cups of almonds
1 1/2 cups of pitted dates
1/4 cup of shredded coconut
1 teaspoon of dairy free spread
Directions:
(1) Preheat Oven to 180C
(2) Place walnuts in the food processor and get them crushing
(3) Add almonds to the walnuts and continue to process
(4) When the nuts are fairly crushed add the pitted dates and get the mix blending
(5) Add the coconut and continue to process along with the vegan spread
(6) You will know if this is the correct consistency if it holds together when squeezed between your fingers. If the mix is still a little crumbly add another teaspoon of spread.
(7) Tip the mix into a round cake tin, press it down firmly (you can use your fingers or a damp tablespoon) starting from the middle and working your way out, try to bring it up the sides just a tiny smidge as this helps keep your filling in place.
(8) Bake for approximately 10 minutes, it will be ready when the top goes slightly golden.
