Vegetarian Canapes
Easy Vegetarian Canapes
These vegetarian canapes are healthy, yummy and easy, just perfect for any dinner party. To make these canapes you will need:
2 lebanese cucumbers, washed and peeled
A punnet or 2 of cherry or grape tomatoes
Use either:
1 Avocado
1 Lemon or lime
Pinch of salt
Or:
A small slice of cheese if you enjoy dairy
Slice the cucumbers into pieces around 1cm thick, place these pieces on a serving platter. Wash the tomatoes and slice them in half.
If using the avocado mix: Mash the avocado and add the juice of a lemon or lime with a good pinch of salt, make sure this mix is blended well. Use a teaspoon to place some of the avocado mixture onto a piece of tomato and then place the tomato onto the cucumber. Cover and refrigerate if not serving immediately, the lemon/lime should prevent the avocado turning brown for a few hours.
Or is using the cheese option simply add a slice of cheese to each piece of cucumber.
These are so simple and yum it is crazy…plus there are no soggy biscuits to deal with!
