Yummy Chocolate Balls
These are excellent to keep in the fridge when you want a chocolate hit, not too naughty but very nice! You will need:
1 Cup Walnuts
1 Cup of Cashews or Almonds
1/4 Cup of Coconut
1/2 Vanilla Pod
1/2 Tspn Organic Cocoa or Cacao
2 Tbspn Coconut Oil
1 1/2 Cup Dates
1/4 Cup of Coconut for rolling
All you need to do is:
(1) Pop the walnuts in the food processor and blend, add cashews or almonds and blend.
(2) Drop in 1/4 cup of coconut and blend, scrape out the vanilla from inside 1/2 a vanilla pod and blend.
(3) Add 1 tbspn of cocoa and blend, add 2 tbspn of coconut oil and 1 cup of dates and blend until the mixture slightly sticks together.
(4) Roll into balls (it’s better if your hands are damp so that they don’t stick), you should get around 20 balls from this mixture, then drop into the extra coconut and coat.
(5) Refrigerate for an hour or so and enjoy, these should keep for a few days in an airtight container.
This reminds me of a recipe my Auntie used to make but it’s much healthier and just as delicious.
